Food Service Manager

Company description

For our client we are looking for a Food Service Manager in Germany.

Description


Reporting to the Deputy Portfolio Manager and overseeing all field dining operations across Grafenwöhr, Hohenfels, and Ansbach Training Areas;
Rotating between training areas based on operational tempo to ensure consistent food service quality and continuity;
Managing full DFAC operations including breakfast, lunch, dinner, and late-night meal services during training exercises lasting up to 22 consecutive days with 24/7 coverage;
Supervising food preparation, ensuring recipe standardisation, and maintaining meal service rates of 8–10 diners per minute during peak periods;
Ensuring strict compliance with TB MED 530 standards, Tri-Service Food Code, AR 30-22 regulations, and nutritional standards;
Monitoring Customer Satisfaction Scores, maintaining ≥70% CSS ratings, and implementing corrective actions when performance declines;
Conducting pre-service inspections and participating in the Five-Tier Quality Control Framework;
Supervising kitchen personnel including cooks, serving line staff, and dishwashers, covering training, coordination, and performance management;
Coordinating equipment maintenance to ensure operational readiness of all kitchen equipment.

Requirements


Associate’s degree in Culinary Arts, Food Service Management, or a related field;
Minimum 5 years of full-time experience in a similar role; Minimum 3 years of DFAC supervisory experience within the last 5 years;
Experience managing facilities serving approximately 1,000 daily meals;
Experience managing diverse teams in high-volume food service environments is proffered;
Experience with the Integrated Meal Planning System (IMPS) is proffered;
ServSafe Manager certification (valid and current);
HACCP certification;
Fluent English.
